1 rounded tbsp chai poh – soaked for around 1 hour (if no time, wash couple of times)
2 eggs
1 tsp sesame oil
3/4 tsp soya sauce
Ground pepper
Dash of water
1/2 tbsp oil for frying
Put eggs, sesame oil, soya sauce, pepper and water in bowl and whisk well.
Meanwhile, dry fry chai poh over medium heat until it dries out (makes sizzling noise and changes colour), then add oil and continue to fry until fragrant.
Tuen heat down to medium low, add egg mixture and cook like an omelette turning over once cooked on one side.
