Infused water: Pomegranate mint water

SERVES 4

INGREDIENTS

  • 4 sprigs fresh mint
  • 1 cup pomegranate seeds 200 g
  • 1 Tbsp honey 15 g
  • 4 cups water* 960 mL

INSTRUCTIONS

  1. Stir: Add mint to a pitcher and muddle with the end of a wooden spoon. Add remaining ingredients (honey optional) and stir to combine.

  2. Serve: Serve chilled, optionally over ice.

NOTES

*Coconut water also works well in this recipe!

Infused water: Strawberry rosewater chia fresca

Serves: Makes 1 quart/ 1 litre
Notes: I made up half of the water with coconut water so that I didn’t have to sweeten this drink with any additional ingredients. If you decide to go with all filtered water, I’d recommend a little drizzle of agave nectar or maple syrup to really bring out that nectar-like strawberry flavour 🙂

1 cup chopped strawberries

4 cups filtered water (or do a half-and-half mix of coconut water and filtered water)

2 tablespoons chia seeds

2 teaspoons fresh lemon juice

1 teaspoon rosewater

 

Combine the strawberries and water in an upright blender. Blend on high until liquified. Run the strawberry water through a fine mesh sieve, pressing through with a spatula. Discard solids.

 

In a pitcher combine the strawberry water and the chia seeds. Whisk to combine. Cover and refrigerate for at least 1 hour, allowing the chia seeds to gel in the chia fresca.

 

Once ready to drink, give the chia fresca a light whisk. Then, stir in the lemon juice and rosewater. Serve with additional wedges of lemon and ice if you like.

Infused water: Strawberry-orange mint water

ingredients

  • 1 sliced orange
  • 6 sliced strawberries
  • 10 mint leaves
  • 4 cups water (1 l)

instructions

  1. Place the sliced fruits and the mint leaves in a glass jar, pour the water and refrigerate for at least 1 or 2 hours (can even do overnight). The longer it sits, the more flavorful the water will be.

Vegan Chocolate Milkshake Smoothie

INGREDIENTS

  1. 1/2 package silken tofu
  2. 10 grams cocoa powder
  3. 1/2 frozen banana
  4. 20 grams fresh raspberries
  5. 60 grams spinach
  6. 1 tablespoon flaxmeal
  7. 240 mL vanilla soy milk
  8. 3 ice cubes

DIRECTIONS

  1. Mix everything in a blender until smooth.
  2. Enjoy immediately.

Ingredients
  • 350ml semi-skimmed milk
  • 100ml double cream
  • 1 cinnamon stick
  • 2tbsp maple syrup
  • 1tsp vanilla extract
  • 150g plain chocolate, chopped
  • 50g milk chocolate, chopped

Instructions
  1. Combine milk and double cream in medium-sized saucepan. Add cinnamon stick, maple syrup and vanilla extract. Slowly bring to boil over low heat to infuse for 5mins, then remove cinnamon stick.
  2. Put chopped chocolate in jug; pour hot milk mixture over and whisk until smooth. Return to pan and gently reheat over low flame, whisking constantly, until just below boiling point. Serve immediately.

Raspberry Lemonade

Ingredients
  • 340g raspberries
  • 80g caster sugar
  • 3 lemons, juice plus zest of ½ lemon
  • 750ml still/sparkling water

Instructions
  1. Tip raspberries into bowl. Sprinkle over caster sugar and finely grated zest of ½ lemon. Mash roughly with potato masher. Leave to macerate for 30mins, then press mixture through fine sieve into jug. Discard seeds. Stir in juice of 3 lemons and add more sugar to taste, if necessary. Chill. Just before serving, mix in water and serve over ice with sprigs of mint.
