Raspberry Lemonade

Ingredients
- 340g raspberries
- 80g caster sugar
- 3 lemons, juice plus zest of ½ lemon
- 750ml still/sparkling water
Instructions
- Tip raspberries into bowl. Sprinkle over caster sugar and finely grated zest of ½ lemon. Mash roughly with potato masher. Leave to macerate for 30mins, then press mixture through fine sieve into jug. Discard seeds. Stir in juice of 3 lemons and add more sugar to taste, if necessary. Chill. Just before serving, mix in water and serve over ice with sprigs of mint.
