Retro Blue Cheese Dressing

Ingredients
- 80g soft blue cheese (e.g. roquefort, Castello Danish blue, gorgonzola)
- 4tbsp soured cream
- 4tbsp buttermilk
- 1tsp cider vinegar
- Black pepper
- Chives, chopped (optional)
Instructions
- Roughly mash cheese in small bowl. Stir in soured cream and butttermilk, cider vinegar and a few grinds of black pepper. Add chopped chives.
- Serve spooned over iceberg wedges or little gem lettuce and sprinkle with crumbled crisp bacon. Also good dressing for green beans.
