Ingredients
  • 500g pork shoulder, diced
  • 1 red chilli, chopped
  • 2cm fresh root ginger, grated
  • 2tbsp honey
  • 1tbsp vegetable oil
  • 3 peppers, sliced
  • 1 lime, juice and zest
  • 3tbsp soy sauce
  • 1tbsp sesame oil
  • 600g fresh egg noodles

Instructions
  1. Marinate pork in chilli ginger and honey for 5mins.
  2. Heat oil and stir-fry pork until golden, then add peppers and stir-fry for further 2mins.
  3. Add lime juice and zest, soy sauce and sesame oil; cook for 1min, then add noodles and cook 2-3mins until liquid has been absorbed. Serve immediately.
