Ginger Chilli Pork Stir-fry

Ingredients
- 500g pork shoulder, diced
- 1 red chilli, chopped
- 2cm fresh root ginger, grated
- 2tbsp honey
- 1tbsp vegetable oil
- 3 peppers, sliced
- 1 lime, juice and zest
- 3tbsp soy sauce
- 1tbsp sesame oil
- 600g fresh egg noodles
Instructions
- Marinate pork in chilli ginger and honey for 5mins.
- Heat oil and stir-fry pork until golden, then add peppers and stir-fry for further 2mins.
- Add lime juice and zest, soy sauce and sesame oil; cook for 1min, then add noodles and cook 2-3mins until liquid has been absorbed. Serve immediately.
