Ingredients
  • 1tbsp olive oil
  • 1 onion, finely chopped
  • 1 carrot, diced
  • 2 garlic cloves, diced
  • 500g beef mince
  • 30g breadcrumbs (from stale white bread)
  • 1 egg, beaten
  • 1tbsp worcestershire sauce
  • 60g tomato ketchup
  • 600g white potatoes
  • 400g parsnips, peeled and cut into 3cm chunks
  • 20g butter

Instructions
  1. Preheat oven to 200C.
  2. Warm oil over medium heat and sweat onion and carrot for 5mins. Add garlic and fry for further minute. Tip into large bowl.
  3. Mix in beef, breadcrumbs, egg, worcestershire sauce and half ketchup. Season well, spoon into 900g loaf tin lined with baking paper and spread remaining ketchup over top. Bake for 40-45mins.
  4. Boil potatoes and parsnips until tender, about 15mins. Mash with butter until smooth. Season well and serve with meatloaf and some steamed green beans.
