Meatloaf with Parsnip Mash

Ingredients
- 1tbsp olive oil
- 1 onion, finely chopped
- 1 carrot, diced
- 2 garlic cloves, diced
- 500g beef mince
- 30g breadcrumbs (from stale white bread)
- 1 egg, beaten
- 1tbsp worcestershire sauce
- 60g tomato ketchup
- 600g white potatoes
- 400g parsnips, peeled and cut into 3cm chunks
- 20g butter
Instructions
- Preheat oven to 200C.
- Warm oil over medium heat and sweat onion and carrot for 5mins. Add garlic and fry for further minute. Tip into large bowl.
- Mix in beef, breadcrumbs, egg, worcestershire sauce and half ketchup. Season well, spoon into 900g loaf tin lined with baking paper and spread remaining ketchup over top. Bake for 40-45mins.
- Boil potatoes and parsnips until tender, about 15mins. Mash with butter until smooth. Season well and serve with meatloaf and some steamed green beans.
