Ingredients
  • 170g unsalted butter
  • 200g light muscovado sugar
  • 100g caster sugar
  • 1 egg
  • 1 egg yolk
  • 2tsp vanilla extract
  • 250g plain flour
  • ½tsp bicarbonate of soda
  • Pinch of salt
  • 200g white chocolate, chopped
  • 150g macadamia nuts

Instructions
  1. Beat butter and sugars until creamy.
  2. Beat in egg, egg yolk and vanilla extract.
  3. Stir in flour, bicarb and salt.
  4. Fold in chocolate and nuts.
  5. Drop spoonfuls of dough onto parchment-lined baking sheets and bake at 170C for 10mins.
  6. Cool for a few minutes then transfer to wire rack to cool completely.
