Ingredients
- 170g unsalted butter
- 200g light muscovado sugar
- 100g caster sugar
- 1 egg
- 1 egg yolk
- 2tsp vanilla extract
- 250g plain flour
- ½tsp bicarbonate of soda
- Pinch of salt
- 200g white chocolate, chopped
- 150g macadamia nuts
Instructions
- Beat butter and sugars until creamy.
- Beat in egg, egg yolk and vanilla extract.
- Stir in flour, bicarb and salt.
- Fold in chocolate and nuts.
- Drop spoonfuls of dough onto parchment-lined baking sheets and bake at 170C for 10mins.
- Cool for a few minutes then transfer to wire rack to cool completely.
