Ingredients
- 3 egg whites
- 80g muscovado sugar
- 80g caster sugar
- 1tbsp cocoa
- 50g dark chocolate, finely grated
- 150g dark chocolate, melted
- Whipped cream
Instructions
- Whisk egg whites to soft peaks then gradually whisk in sugars until stiff and glossy.
- Gently fold in cocoa and grated dark chocolate.
- Pipe or spoon 12 meringues onto parchment-lined baking sheets and cook in a 140C preheated oven for 45mins.
- Cool then dip botton of meringues in melted chocolate.
- When set, sandwich together with whipped cream.
