Ingredients
  • 3 egg whites
  • 80g muscovado sugar
  • 80g caster sugar
  • 1tbsp cocoa
  • 50g dark chocolate, finely grated
  • 150g dark chocolate, melted
  • Whipped cream

Instructions
  1. Whisk egg whites to soft peaks then gradually whisk in sugars until stiff and glossy.
  2. Gently fold in cocoa and grated dark chocolate.
  3. Pipe or spoon 12 meringues onto parchment-lined baking sheets and cook in a 140C preheated oven for 45mins.
  4. Cool then dip botton of meringues in melted chocolate.
  5. When set, sandwich together with whipped cream.
