- 2 garlic bulbs, cloves separated
- 30ml olive oil
- 1.5kg pork belly
- 1tbsp sea salt
- 20g sage
- Preheat oven to 160C. Arrange garlic in baking dish. Rub oil over pork and salt into skin. Place skin-side down on top of garlic, and cook for 3hrs.
- Increase heat to 220C. Turn over pork and cook for further 40mins adding sage for final 10mins or until skin is golden and crunchy.
