Honey-glazed Chicken Skewers with Festive Salsa

Ingredients
- SKEWERS
- 800g chicken breast, cubed
- 3tbsp runny honey
- ½tsp crushed chillis
- 1 garlic clove, crushed
- Grated zest of 1 lemon
- SALSA
- 1 orange, peeled and flesh cubed
- 60g pomegranate seeds
- 1 spring onion, finely sliced
- 2tbsp mint, chopped
- ½ lemon juice
Instructions
- Put chicken in bowl with honey, chilli, garlic and lemon then marinate for 4 hours.
- Season then thread onto soaked skewers and grill for 12-15mins, turning regularly.
- For salsa mix all ingredients together.
