Ingredients
  • 1.5l Chicken Stock
  • 2cm Fresh Root Ginger
  • 2 Shallots
  • 2 Red Chillis, deseeded
  • 3 Spring Onions
  • 2 Kaffir Lime Leaves
  • 200g Raw Peeled Prawns
  • Handful Chinese Leaves
  • 1tbsp Fish Sauce
  • 1 tsp Light Soft Brown Sugar
  • Handful Coriander, chopped
  • Juice of ½ Lime

Instructions
  1. Finely slice ginger, shallots, chillis and spring onions.
  2. Heat chicken stock and add sliced ginger, shallots, chillis and spring onions with kaffir lime leaves and simmer for 10 mins.
  3. Next add prawns, Chinese leaves, fish sauce and sugar then simmer for another 3 mins.
  4. Stir in coriander and lime juice then serve.
