Ingredients
- 3-4 ripe bananas, smashed
- ⅓ cup melted butter
- ¾ cup brown sugar
- 1 egg, beaten
- 1tsp vanilla
- 1tsp baking powder
- Pinch salt
- 1½ cups plain flour
Instructions
- Preheat oven to 180C.
- With wooden spoon, mix butter into mashed bananas in large mixing bowl.
- Mix in sugar, egg and vanilla.
- Sprinkle baking soda and salt over mixture and mix in.
- Add flour last.
- Pour mixture into buttered 4″ * 8″ loaf pan.
- Bake for 1 hour.
- Cool on rack.
- Remove from pan and slice to serve.
