Susie’s recipe, tried and tested in Singapore.

Ingredients
  • 3-4 ripe bananas, smashed
  • ⅓ cup melted butter
  • ¾ cup brown sugar
  • 1 egg, beaten
  • 1tsp vanilla
  • 1tsp baking powder
  • Pinch salt
  • 1½ cups plain flour

Instructions
  1. Preheat oven to 180C.
  2. With wooden spoon, mix butter into mashed bananas in large mixing bowl.
  3. Mix in sugar, egg and vanilla.
  4. Sprinkle baking soda and salt over mixture and mix in.
  5. Add flour last.
  6. Pour mixture into buttered 4″ * 8″ loaf pan.
  7. Bake for 1 hour.
  8. Cool on rack.
  9. Remove from pan and slice to serve.
