115g unsalted butter, melted, plus extra for greasing
100g blueberries
Instructions
Preheat oven to 180C. Grease and flour a non-stick 12-hole muffin tin. Mix together flour, ground almonds and icing sugar. Stir in egg whites until just combined, then stir in melted butter.
Spoon batter to about 2cm deep in each hold of muffin tin. Arrange a few blueberries on top of each.
Bake for 30-35mins until pale gold. Friands should spring back when touched. Remove from oven and leave in tin for 5mins before turning out onto wire rack to cool. Dust with a little icing sugar before serving.
