Hot and Sour Soup

- 1.5l Chicken Stock
- 2cm Fresh Root Ginger
- 2 Shallots
- 2 Red Chillis, deseeded
- 3 Spring Onions
- 2 Kaffir Lime Leaves
- 200g Raw Peeled Prawns
- Handful Chinese Leaves
- 1tbsp Fish Sauce
- 1 tsp Light Soft Brown Sugar
- Handful Coriander, chopped
- Juice of 1/2 Lime
- Finely slice ginger, shallots, chillis and spring onions.
- Heat chicken stock and add sliced ginger, shallots, chillis and spring onions with kaffir lime leaves and simmer for 10 mins.
- Next add prawns, Chinese leaves, fish sauce and sugar then simmer for another 3 mins.
- Stir in coriander and lime juice then serve.
